CSA is a system that allows folks to connect more deeply with the source of their food by subscribing to the seasonal harvest of a given farm.
Engaging in the process with both animal and farmer fosters a better understanding and appreciation for the pork on your plate.
It also tastes a hell of a lot better than pork from the grocery store. We promise.
how it works
When you participate in the Valley Piggery CSA you are purchasing a share of one of our heritage-breed, pasture raised pigs. (More on the breeds, husbandry, and values here.)
Shares are announced monthly via an e-mail newsletter, and are sold on a first-come, first-served basis. Five whole shares, or ten half-shares, are available per pig.
The cost of the Pork CSA is $13 per pound for a whole share and $14 per pound for a half share. The individual cuts will come fresh (never frozen), vacuum-sealed, and ready for your freezer.
Anybody who misses out on a share or half-share will get the first chance to purchase one from the next pig.
what you get
You can purchase either a whole share (25-35lbs) or a half share (12-18lbs).
The share itself will consist of a cross-section of what a whole pig has to offer, meaning you can always count on some chops, roasts, belly, and ground pork. In addition there will be a selection of the following: jowl, spare and baby back ribs, tenders, liver, shanks, trotters, and sausage.
I will do my best to cater to each customer’s preferences, but with the understanding that to participate in the CSA is to celebrate the whole animal. I have an abundance of knowledge with preparing the more esoteric cuts and will always give you recipes and tips as a part of your subscription.
You can pick up your shares in both Buellton or Santa Barbara. In Buellton, the pick-up is at my catering kitchen on Industrial Way. In Santa Barbara, the exact location for pick-up will depend on the geography of the customers for that particular CSA share. Valley Piggery is always willing to work with you to make the pick-up as convenient as possible.
